My Favorite Recipe
Whether you’re after an irresistible dessert, or just something to devour alone in front of the TV, here’s the favorite recipe of Thomas Rüppel, chef at Zauberberg.
Chocolate Cake
Serves nine
Ingredients:
100 g dark cooking chocolate,
broken into pieces
175 g butter,
plus a little extra to grease tin
4 eggs
Finely grated rind of 1 orange
150 g light demerara sugar
50 g flour
50 g ground almonds
50 g brown chocolate strands
50 g white chocolate strands
Powdered sugar and cocoa powder
for sprinkling
Preparation:
Preheat oven to 180 degrees. Grease a 20 x 20 cm cake tin and line with baking paper. Put cooking chocolate into a bowl with the butter and melt over a saucepan of simmering water, stirring constantly. Leave to cool. Beat eggs, orange rind and sugar until light and creamy, then stir in butter and chocolate mix. Finally add the flour, almonds and chocolate strands. Pour mixture into the tin and bake for 25 minutes. (The cake should still be slightly damp.) Leave to cool in the tin, then remove carefully. Cut into nine squares, dust with powdered sugar and cocoa powder and serve with vanilla ice cream and red berries.
